Triple chocolate cake - Tort tripla ciocolata - Torta al triplo cioccolato



How to make:
Base:5 eggs,175 gr sugar,110 gr flour,35 gr cocoa,6 gr baking soda,60 melted butter.
Mix together eggs and sugar until colors of the eggs will become almost white,add flour,cocoa,baking soda and mix gentle with a tablespoon,add melted butter.Pour on to a baking paper,into the baking try with diameter of 25 cm.Bake into the oven for 20 - 25 min at 180 Celsius.Allow to cool and cut the base in to 2 equal parts.
Chocolate mousse: 2 eggs,50 ml coffee,400 gr whipping cream,200gr chocolate.
Whites of eggs mixed very well.Separate mix well the yolks.Separate whipping the cream.
Separate melt the chocolate allow to cool for 10 -15 min, add the coffee and mix,add yolks,whites of eggs and mix,add the cream and mix gently.Put into the fridge for 15 min.
Put on a serving plate a ring from baking try,then one part of the base and pour 4-6 tablespoon of Irish cream or brandy,add the chocolate mousse,then second part of base and pour 6 tablespoon of liquid coffee.Allow to cool.
Glaze:150 ml water,150 ml double cream,200 gr sugar,50 gr cocoa,8 gr gelatin.
Mix and boil for 10 min: water,cream,sugar,cocoa.Allow to cool for 15-20 min and add the gelatin (which was mixed with 6 table spoon of water).Leave the glaze for 1 hour into the fridge.
Pour,with care, the glaze on top of the cake,allow to cool for 3 hours and decorate.
