Chicken Valdostana - Pollo alla Valdostana - Pui alla Valdostana

How to make: 4 chicken breasts, 4 slices Parma ham,1 tablespoon flour,1 teaspoon dried herbs,salt,pepper,2 tablespoons olive oil,50 gr butter,4 slices Mozzarella,100 ml dry white wine.
Place the chicken breasts between 2 sheets of graseproof paper and beat then flat.Coat the chicken pieces in flour,herbs,salt,pepper and fry in oil and butter 5 mins each side.Put a slice of ham on top of each piece of chicken,cover with mozzarella.Pour wine into the pan ,cover and simmer for 5 minutes.
Serve with mushroom saute and cucumber salad.
