How to make :
1 medium chopped onion, 250 gr slices potatoes,5 eggs, 3 tbs olive oil,salt and black pepper.
The size of the frying pan is important,20 cm diameter.
Peel and copped the onion. Peel and slice the potatoes into thin rounds.
Heat the olive oil in the frying pan and add the potatoes and the onion.Toss them around in the oil to get a good coating,add generous sprinkling of salt and pepper.Put a lid on a frying pan and let to cook gently for 10 -15 mins,or until tender.Turn them over halfway through and shake the pan from time to time,as they are not supposed to brown very much,but just gently stew in the oil.
Separate,break the eggs into a large bowl and whisk them.When the onion and potatoes are cooked,quickly poor the eggs over them and turn the heat down to its lowest setting.It's going to take about 15- 20 mins to cook slowly,uncovered.When there is virtually no liquid egg left on the surface ,turn it over to cook the other side.To do this,place a flat lid or plate over the pan and invert both so that the tortilla is on the lid or plate.Then put the paella back into the pan.Give it 2 mins more,then turn the heat off and leave it for further 5 mins to settle.Serve hot or cold with tomatoes salad and a glass of Rioja.
