How to make :
Pastry: 150 gr sifted flour,100 gr unsalted butter chilled and diced,50 gr caster sugar,2 egg yolks.
Rub the flour and the butter together,stir in the sugar,.Beat the egg yolks and bring the mixture together.Wrap the dough in clingfilm and chill for1 hour.
Frangipane filling: 125 gr unsalted butter,125 caster sugar,3 eggs,1/2 tsp almond extract,125 gr ground almonds,100 gr strawberry jam,100 gr fresh strawberry,25 gr flaked almonds.
Preheat the oven at 160 C.Roll out the pastry on a well floured surface to a thickness of 3 mm .Use it to line the tin(25x20cm),leaving an overlapping edge of 1 cm and bake for 20 mins.
For frangipane filling ,cream together the butter and sugar until pale,beat in the eggs,add almond extract and ground almonds.
Spread the strawberry jam over the base add the frangipane,add fresh strawberry and scatter with flaked almonds.Bake in the oven for 30-40 mins or until golden brown.Remove from the oven,allow to cool before drizzling with icing sugar(optional).
