How to make : 4 tomatoes diced,1/2 chopped green and red pepper, 1 chopped clove garlic, chopped basil or green parsley, 3 tbs olive oil, coarse sea salt, black pepper, mozzarella, anchovies,smoked salmon,salami, Italian or French bread.
Preheat the oven at 220 C.
In a bowl mix together tomatoes,red and green pepper,garlic,basil or parsley,2 tbs olive oil,salt and black pepper;set aside.
Slice the bread into 2 cm slices,brush each slice with olive oil and toast them into the oven until golden brown.Top each bruschetta with tomatoes mixture,cubes of mozzarella and salami,or smoked salmon,or anchovies,etc.
Try not to top to far ahead of serving,as the bread can get soggy.
