How to make:
2 eggs, 1 lemon zest, 1 tsp ground ginger, 8 tbs sugar, 8 tbs melted butter, 4 tbs cream,4 tbs milk, 1 tsp baking soda,350 gr plain flour,fondant icing sugar.
Preheat the oven at 175 C.
Mix the ingredients until the dough will became firm,allow to cool in to the fridge for 10 - 15 mins. Roll out a sheet 1.5 cm thickness and cut the cookies. Bake into the oven for 8 - 10 mins. Glaze each cookie with apricot jam and decorate with fondant icing sugar.
