Panettone kneaded in bread machine- Cozonac framantat la masina de paine














How to make: The recipe is similar with Panetone,but the only difference is that for kneading the dough,I used the bread machine program no. 8 (dough).
Ingredients : 500 gr flour,8 gr dried yeast,200 gr sugar,10 gr vanilla sugar,250 ml milk,100 ml oil,50 ml double cream,3 yolks,1 tsp salt,rum essence,vanilla essence,grated zest from 1 lemon.
In the bread-making machine,add the ingredients in this order: salt,sugar,vanilla sugar,milk,double cream,oil,yolks,lemon zest,flour and yeast and start the program (11/2 hour).
Filling : 3 whites egg,4 tbs sugar,1 tbs cocoa,200 gr ground walnut,2 tbs sultanas,2 tbs chopped Turkish delight.
Beat the whites egg,add the sugar little by little and beat until form peaks,stir in cocoa and dived the mixture in 2 parts.
After the dough was kneaded,put it on the oiled work-surface and dived in two parts .
Press each part of dough to form a rectangle ( 30 cm x 20 cm),fill each part with walnut filling,1 tbs sultans,1 tbs Turkish delight and roll.Line with baking sheets,2 baking trays (30 cm x 10 cm),put the panetones and leave to rise for 20 - 30 mins.
Beat 1 yolk with 1 tbs milk,brush the panetones,sprinkle over caster sugar,poppy seeds and sesame seeds.
Preheat the oven to 150 C,bake for 45 - 55 mins.
Take out the panetone from the trays allow to coll and slice for serving.
Cum se face :
Ingrediente : 500 gr faina,8 gr drojdie uscata,200 gr sugar,2 plicuri zahar vanilat,250 ml lapte,100 ml ulei,50 ml smantana,3 galbenusuri,1 lingurita sare,esenta de rom si esenta de vanilie,coaja rasa de la 1 lamaie.
Ptr umplutura : 3 albusuri,4 linguri zahar,1 lingura cacao,200 gr nuca macinata,2 linguri stafide,2 linguri bucatele de rahat.
Ptr.uns: 1 galbenus de ou amestecat cu 1 lingura lapte,susan,mac,zahar.
Se pun ingredientele in cuva masinii de paine in aceasta ordine: sarea,zaharul,zaharul vanilat,laptele,smantana,uleiul,galbenusurile,esentele,coaja de lamaie,faina si drojdia.Se programeaza masina pe programul de framantat aluat (cca 11/2 ora).
Se incinge cuptorul la 150 C.
Se prepara umplutura de nuca : albusurile se bat spuma,apoi se adauga treptat zaharul si la sfarsit cacao.
Dupa ce aluatul a fost framantat,se aseaza pe blatul de lucru uns cu ulei.Aluatul se imparte in doua si fiecare bucata se intinde putin(30cmx20cm),apoi se aseaza umplutura de nuca,stafidele,bucatele de rahat.Se ruleaza si se aseaza in tava tapetata cu hartie de copt ,se lasa la crescut inca 20 - 30 min.Se ung cozonacii cu ou batut,se presara zahar tos,susan,mac si se coc la 150 C aproximativ 45 - 55 minute.Se scot cozonacii din tavi si se lasa la racit apoi se feliaza.
