Valentine cake - Tort Valentin - Torta Valentino

How to make:
Base : 250 gr butter biscuits,100 gr butter,100 gr coconut ,2 tbs icing sugar,2 tbs cocoa,2 tbs Baileys,50 gr melted milk chocolate,1 tbs rum flavor.Mix all ingredients.Arrange a ring (20 cm diameter)on a serving plate .Press the mixture in an even layer and leave to cool.
Filling 1 : 50 gr butter,50 gr brown sugar,200 gr condensed milk.Melt the butter and sugar into a non -stick pan over a low heat,stirring all the time until the sugar has dissolved,add the condensed milk and bring to a rapid boil for about a minute,stirring all the time for a thick golden caramel.
Spread the caramel over the biscuits base and chill for 40 - 60 mins.
Filling 2 : 200 ml wiped double cream mix with 3 tbs strawberry jam.
Spread the mixture over the layer of caramel and chill for 30 - 40 mins.
Glaze : 135 gr strawberry jelly.
Melt the jelly,allow to cool and pour over the cake.Chill for 30 mins and decorate with icing sugar mixed with water.
