Base ingredients : 6 white eggs,5 yolks,6 tbs water,12 tbs sugar,12 tbs flour,1 tsp baking soda,1 tbs vanilla extract.
Filling : 300 ml double cream,100 gr lemon curd,100 gr lemon butter cream,50 -70 ml Limoncello, 1 tsp gelatin.
Decorations: 300 gr fondant icing sugar,2 tsp cocoa,5 apples,walnut halves,black grapes,physallis fruits,300 gr sugar for caramelize the fruits,juice from 1 lemon.
Base : Mix the white eggs and water until colors of the eggs will become almost white and will doubled in its volume. Add sugar little by little until the mixture will be come thick.Stir in the yolks,vanilla extract and mix well,then add sifted flour,baking soda and mix gentle with a tablespoon. Preheat the oven at 160 C.
Lay a baking paper in a baking try with diameter of 22 cm (or a square try 22 x 25 cm). Bake in the oven for about 35 min at 160 Celsius.Allow the base to cool and cut in 3 equal parts.
Filling : Prepare the butter cream( you can find the recipe at: Biscuits vanilla butter cream) and stir in the lemon juice.Whipped the cream until stiff,then mix with lemon curd and the gelatin.Combine the lemon butter cream with the mixture of whipped cream,then stir in the Limoncello. Divide the mixture in two parts.
In a baking tray with diameter of 22 cm, lay the first part of the base add one part of the filling,lay the second part of the base,add the rest of the filling,then lay the last part of the base.Cover with climbing film and allow to cool into the fridge for 6 - 8 hours or overnight.Upside down the cake on to a serving plate,cover the cake with a tin layer of lemon butter cream and dust with 1/2 tsp of cocoa.
Decoration : Mix 1 part of black fondant sugar with 2 parts of white fondant sugar to obtain a grey color. Roll out the fondant sugar and cover the edge of the cake like is shows in photo.Use a knife to make some wood patterns on the fondant sugar.
Mix 1 tsp cocoa with 1 tbs of limoncello or gin and brush over the grey fondant (the edge of the cake).
Caramel for the fruits : Caramelize the sugar and mix with lemon juice. Stick in each apple a skewer and caramelize each fruit with great care. Optional : Do so with the rest of the fruits
Arrange the fruits over the cake,starting with the apples .Refrigerate until serving.
