Bohemia - Boema




Base : 5 eggs,5 tbs water,10 tbs sugar,5 tbs flour,5 tbs cocoa.







Cream : 200 gr chocolate,200 ml double cream,1/2 teaspoon Rom flavoring.







 Sirop: 100 gr sugar,200 ml water,1 tbs Rom flavoring.








Glaze : 150 gr milk chocolate,50 ml double cream,4 tbs milk.










How to make : 
Base : 5 eggs,5 tbs water,10 tbs sugar,5 tbs cocoa,5 tbs flour.Separate the egg whites,mix very well( 15 mins) the egg whites with water,add the sugar and mix until become thick,add the yolks and mix,add the Rom flavoring,the flour and cocoa and mix
 with a tablespoon .Composition is placed in a baking try (28 x 40 cm) lined with baking paper.Bake into the oven at 160 C for 20 - 25 mins.
Allow to coll and cut the base in squares (5 cm x 5 cm).
Syrup: 100 gr sugar is caramelized,add 200 ml cold water,then put back on the low heat until caramel dissolves.Remove from the heat and add 2 tbs Rum essence/flavoring.
Glaze: 200 gr milk chocolate and 50 ml double cream is put on heat until chocolate melts,add 4 tbs milk and mix well.You can add more milk ,so that the glaze can flow.
Chocolate cream filling: 200 gr broken chocolate pieces melted (on a steam) in 200 ml double cream. Remove from the heat allow to cool,then refrigerate for 1 hour,then mix very well until become thick.
Decoration : 150 ml whipping/double cream and 50 gr grated chocolate .
The cold cake has to be cut in squares, pour the hot syrup,then the glaze, then the chocolate cream filling.Decorate with whipping cream and grated chocolate.Refrigerate for 2 hours before serving.
