Buns with cheese&mushroom - Chifle cu branza si ciuperci - Panini con formagio e funghi



























How to make:

Dough : 400 gr flour,250 ml water,7 gr dried yeast,1 egg,4 tbs olive oil,1 tsp salt,1 tsp sugar.
Glaze : 1 yolk egg mix with 2 tbs milk;sesame/poppy/linen seeds.
Filling : 100 gr chopped mushroom,1/2 chopped onion,1 tbs oil,100 gr Wenslaydale cheese or feta cheese.Fry for 5-7  mins,the onion and the mushroom in the oil.Allow to cool and stir in the cheese.

Dough :Put all ingredients for the dough in the bread machine and start the program for kneading and rise the dough(11/2 hour).After the dough was kneaded,put it on the floured work-surface and dived in two parts. Divide each part in 8 equal pieces,then flat each part and fill with 1-2 tbs of mushroom and cheese mixture.Form the buns and put it upside down on a floured surface.Line with baking paper a baking try,put the buns upside down and allow to rise for 15 mins.Brush with the mixture of yolk egg and milk,then sprinkle over poppy/sesame/linen seeds and bake for 30 mins in the preheated oven at 200 C.
Tip: when preheat the oven,put in the oven a small tray with water to hydrate the oven. 

Cum se prepara :
Ingrediente: 400 gr faina,250 ml apa, 7 gr maia uscata,1 ou,4 linguri ulei masline,1 lingurita sare,1 lingurita zahar.
Glazura: 1 galbenus ou amestecat cu 2 linguri lapte,seminte de susan/mac/in.
Umplutura : 100 gr ciuperci tocate,1/2 ceapa tocata,1 lingura ulei,100 gr branza feta sau de burduf sau telemea rasa sau cascaval.Se caleste ceapa in ulei ,se aduga ciupercile si se lasa pe foc pana scade tot sosul lasat de ciuperci,apoi se amesteca cu branza.

Aluatul: In cuva masinii de paine se adauga in aceasta ordine: apa,uleiul,sarea,zaharul,oul,faina si maiaua,apoi se programeaza masina de paine pe programul de framantare si dospire(11/2 ora).
Aluatul se poate framanta si manual ptr 10 - 15 min, pana capata o consistenta elastica si nu se mai lipeste,apoi se lasa la crescut 1 ora.
Se rastoarna aluatul pe masa de lucru presarata cu faina,se imparte in doua parti si apoi fiecare parte in  8 bucati egale.Fiecare bucata se preseaza ca sa capete o forma circulara cu diam de 12-15 cm,se adauga o lingura din umplutura si se aduna marginile spre mijloc( vezi foto).
Preincalzeste cuptorul la 200 C.
Se aseaza o hartie de copt in tava cuptorului,se aseaza chiflele cu fata in jos,la o distanta de 5cm intre ele si se lasa la crescut 10 min. Se ung cu amestecul de ou si se presara seminte de susan/mac/in.
Se aseaza in cuptor un vas cu apa pentru a hidrata cuptorul,apoi se coc chiflele cca 25 - 30 min,la 200 C, sau pana devin aurii si trec testul scobitorii.
