Meringue roulade - Rulada bezea - Merengue rollata

























How to make:
Ingredients : 6 egg whites,250 gr sugar,1 tbs lemon juice,1 tbs corn starch,250 ml double cream,2 tbs strawberry jam,100 gr chopped fresh strawberries,50 gr blackcurrant,icing sugar.

  1. Heat the oven to 150 C. Line a tin (23 cm x 30 cm) with baking paper. Whisk the egg whites with a pinch of salt until stiff. Slowly add the sugar, still whisking, until stiff and glossy,then stir in the lemon juice and the corn starch. Spoon the mixture evenly onto the baking tray and bake for 15 minutes, until crisp on the outside. Remove and cool completely.
  2. Lay a piece of fresh grease proof paper out and flip the meringue over onto it, carefully pull away the used paper and discard. Spread the whipped cream mixed with strawberry jam over it and then the fresh strawberries. Sprinkle over the blackcurrants. Roll the meringue up length-ways using the paper to help turn it over. Put on a serving tray and dust with icing sugar.
